About Us
In Italian "fianco" means "on a hillside" with the connotation of neighbor. At fianco, we aspire to create a casual, comfortable atmosphere to enjoy rustic, health-forward Italian food paired with affordable Italian wines. We strive to prepare most of our items in house and are firm supporters of locally-sourced, seasonal products grown by local farmers.

About the Chef
Matt Troost began cooking in Michigan when he was 19. Quickly realizing the culinary arts as his passion, he attended Scottsdale Culinary Institute Le Cordon Blue Program in Scottsdale, Arizona. After completing the program he moved to Aspen, Colorado and worked at the five star Little Nell. Matt then moved to Chicago, Illinois and began working at the Peninsula Hotel. Living in Chicago for a short time, he met the owner and manager of fianco and accepted the head chef position. Matt describes fianco's menu as modern-rustic Italian. Although contradictory in description, our food mirrors the rustic dishes of Italy with a modern twist always guaranteeing the freshest ingredients.
